What is the story behind the name?
Sitting on a barstool in a dimly lit restaurant, the idea hit during one of those perfect "aha!" moments. Brainstorming our next big adventure—a food truck that would bring something unique and delicious to the streets of Kansas City. As we tossed around ideas, on types of cuisines, one thing kept coming up: our mutual love for mushrooms. Their versatility, their flavor, and their connection to hearty, wholesome eating felt like the perfect centerpiece for our vision.
Then, inspiration struck: stuffed mushrooms! That classic, comforting dish sparked a name that felt just right—Tiffany said, "ooo, we can call it, The Stuffed Mushroom". It’s not just a name; it’s a nod to creativity, bold flavors, and a love for reimagining familiar foods. With that, our mushroom-centric, food truck dream was born and we got right to work.
Now, we're serving up unique twists on street food, featuring fresh, locally sourced ingredients and a whole lot of heart. Whether you’re a lifelong mushroom lover or just curious to explore, we’re here to prove that mushrooms can steal the show.
Q&A with the Founders: Owner Tiffany Rose & Chef Jason

Why did you decide to start a business?
Tiffany: Entrepreneurship has always been in my blood. Growing up, I watched my dad, a strong-willed and incredibly talented entrepreneur, navigate the highs and lows of running a business. He’s been my biggest inspiration, teaching me invaluable lessons about determination, resilience, and the art of pursuing a dream. My mom, too, played a role—whether it was helping her at craft show booths or assisting my dad at his storefronts in the mall, I’ve been in the business world for as long as I can remember.
Jason: I've always had this idea, a dream to create something different, something no one else is doing, something with mushrooms. For decades, I have talked about opening a cafe, sharing my love of fungi with everyone. After I met, Tiffany, I knew we were going to do amazing things together.
For us—this isn’t just a food truck—it’s about serving others with heart, creativity, and unforgettable flavors, while building something truly special for our community.
Who encouraged you the most to start your own business?
Tiffany: The journey to starting The Stuffed Mushroom wouldn’t have been possible without the support of two incredible people: Jason and my dad.
My dad, a natural entrepreneur, has been my biggest role model. His unwavering determination and talent for turning dreams into reality have inspired me from the very beginning. He taught me the value of hard work, perseverance, and chasing what you’re passionate about, no matter the obstacles.
Then there’s Jason—the talented cook behind the scenes. When our shared vision of creating a food truck that celebrates bold flavors came to life, he didn’t hesitate to jump in wholeheartedly. His encouragement and culinary skills gave me the confidence to make this dream a reality.
With their support, we’ve turned The Stuffed Mushroom into more than just a food truck; it’s a celebration of passion, creativity, and the power of belief in one another.
Where did you learn to cook?
Tiffany: As a young child, I spent countless afternoons in my grandmother's kitchen. She had this beautiful ritual: every day, she’d record episodes from the Cooking Channel on her trusty VHS tapes. Later, she’d play them back, experimenting with recipes and creating incredible dishes inspired by what she’d learned. Watching her bring food to life sparked my appreciation for bold flavors and creativity in the kitchen. That passion stayed with me, influencing how I approach food today.
Jason: Years of hating bland flavors and experimenting with recipes taught me the value of taking risks in the kitchen. I pour that inspiration and love for flavor into every dish.
Together, we’ve built a food truck that celebrates the joy of creating something special to share with our community.
What's the favorite event that you've catered for?
At The Stuffed Mushroom, we’ve had the privilege of catering some incredible events, but festivals hold a special place in our hearts. There’s something magical about being surrounded by hippie-love vibes, free spirits, and a community of people who truly embrace creativity and connection.
Events like these, align perfectly with the values we pour into our food. Sharing our bold, mushroom-centric dishes with such open and enthusiastic crowds is an experience we’ll always cherish. It’s a reminder of why we love what we do: bringing people together over fresh, flavorful creations.
